  I love www.allrecipes.com. They also have a vegetarian section (http://vegetarian.allrecipes.com/). It's free, of course. They're fantastic for planning, because there are a zillion recipes, ranked and reviewed, plus whole meal ideas, etc. You can alter recipe size with the click of the mouse, print shopping lists, etc. And if you actually become a member (also free), you can add recipes to your "recipe box" for future reference, add comments, etc. It's really cool; not sure what I'd do without them.

  Dumplings with spinach and peanut-butter sauce is excellent. If you make this, you may want to use an unsweetened peanut butter. Do a web search to find a recipe. There is a camerounaise version and a senegalaise version. Some recipies call for sorrel instead of spinach.

Also, liver and onions tastes much better with cut tomatoes added on top.

  The recipes I tried this time were out of some generic 1000 Vegetarian Recipes. (I'll try upping the amount of hot spices next time.)

If you want quick & excellent, last time I was down at the Auburn, WA, Adventist Book Center, they carried a curry sauce by Auntie Saro (a member of the Greenlake Adventist Church). (I beleive it is carried a few other places like Apple Valley in Berrien Springs, MI)

  My favorite quick meal is a veggie burger with a grilled onion slice and cheese. On whole grain bread, of course. And as an alternative to salsa, try guacamole as a dip.

I also like hearty soups. I finally found a really good lentil soup recipe in my local paper.

I also like getting one of those roasted chickens at the grocery store. It may last me a week, but all I hav to fix are veggies and pasta!

  Chinese gluten comes in a can (the cans look small, but they pack a whole lot in). Braised gluten tastes best. You can get it at oriental markets and in some supermarkets.
