INGREDIENTS
6 ounces silken tofu
1 cup organic sugar (or try Sucanat)
1/3 cup extra light olive oil
Zest of 2 lemons
3 tablespoons lemon juice
1 teaspoon vanilla
2 cups all-purpose flour (you can replace half with whole wheat flour if you like)
1 cup semolina flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup chopped almonds
1/2 teaspoon salt
Preheat oven to 375F degrees.
1. In a food processor or blender, combine tofu, sugar, oil, zest, lemon juice, and vanilla.
2. In a large bowl, whisk together the flours, baking soda, baking powder, almonds, and salt.
3. Stir tofu mixture into flour mixture.
4. On an oiled cookie sheet, form dough into two 12-inch long logs.
5. Bake for 25 minutes.
6. Remove from oven and cool on counter for 15 minutes.
7. Reduce oven temperature to 300 F.
8. Slice logs into 1/2-inch slices and lay slices flat on ungreased cookie sheets.
9. Bake for 40 minutes, turning cookies once after 20 minutes. Additional cooking time may be added for an even crunchier cookie.

Raw Vegan Pumpkin Pie
CRUST
2 1/4 cups pecans, soaked overnight and dehydrated for 24 hours
2 tablespoons maple syrup
1 tablespoon coconut oil
1 tablespoon date paste
1 pinch sea salt
1. Place prepared pecans in food processor; pulse into small crumbs. Mix pecans and all remaining ingredients together well by hand.
2. Press into plastic (or parchment) lined 9-inch tart pan to desired thickness. Dehydrate 48 hours.
3. Chill crust in freezer for 15-30 minutes before filling. If not using all of hte crsut mixture, store extra in a container in the freezer.
FILLING
1/2 cup cashews, soaked
1/2 cup maple syrup
1/4 cup agave
1/2 cup coconut oil
1/2 cup + 2 tablespoons carrot juice
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/4 vanilla bean, scraped
1 1/2 teaspoons cinnamon
1 1/2 teaspoons nutmeg
1. Blend all ingredients in Vita-Mix (or a basic heavy duty blender) until very smooth.
2. Fill tart crust and chill in freezer overnight. Remove pie from tart pan, cut into 12 even slices and serve, or wrap each slice in parchment and store in refrigerator.

As a rule of tumb, fruit smooties have a thikner: ex. mango or banana
a tarty fruit: kiwi, strawberries, pinaple
a liquid: apple juice, orange or pinaple juice
sweetner: no sweetner needed
Vegetable smoothie: ex.tomatoe juice
greens
garlic
onion
olive oil
inch of salt
basil
Be creative, there are as many variations as are ingredients, this is a handy way to get raw food when you are to busy...

there is a gye called Fredric patrnade (not sure of the spelling but he has great smoothie recipes also a book bye the raw family called green for life.
